Let’s Play Catch-Up

Good news!

I finally made it to the grocery store. It’s really a good thing too because if I had gone any longer I would have had to resort to eating packets of Splenda and spoonfuls of barbecue sauce for meals. Don’t get me wrong…I love me some BBQ sauce. But I also try to stay somewhat in line with what is socially acceptable. Spoonfuls of BBQ sauce…? That’s pushin’ it.

Anyways, I don’t have a TON of pictures of recent eats, but I have a few to catch you up on!

CRUNCHY

I don’t know if you knew this about me, but I am a Reduced Fat Jif snob. My sister and I agreed that it is our fave PB because it’s not as oily and rich as the regular kind. Which means I can eat about 8x as many spoonfuls w/out getting sick. Winner.

When I discovered that they had the crunchy version in Reduced Fat, I almost peed my pants. None of my roommates shared my enthusiasm. It was a shame.

Needless to say, I bought a jar of the creamy and the smooth and have been alternating them and thoroughly enjoying the change of texture. Crunchy PB has been appearing in most of my breakfasts this week, which have looked a little bit like this…

Multi-grain Eggo waffle with pb and banana. Holy deliciousness. Alexa’s PB Banana Waffle-wich inspired me and I have been having this combo for breakfast all week. It’s amazing!

Spinach salads

Usually I don’t buy spinach because it goes bad before I can finish the bag, but I’m SO glad that I went for it this week. I’ve already had like 4 salads and have put it on all of my sandwiches. It rocks.

Strawberries

Strawberries were on sale 2 for $3 (WHAT?!) and they have definitely been the star of almost all of my meals this week, including…

Protein smoothies! I rarely get to make them because my blender is SO loud and usually at least one of my roommates is still sleeping while I’m making breakfast, but when I do get to have them, I enjoy every.last.bite.

The other night all I wanted for dinner was yogurt and cereal. Sometimes breakfast food is all the sounds good all day. So I combined blueberry Chobani, Kashi Go Lean, and topped it w/ sliced strawberries. It was fantastic.

Turkey sandwiches and carrots + hummus is pretty much my go-to-lunch. Usually I have an apple too. So I shook it up this week by adding some red in the form of cherry tomatoes and strawberries.

Well I’m sorry for the totally lame post but I’m still battling my sniffly cold so I’m going to go crawl back into bed with my book:

I totally recommend this series if you’re looking for a light read! They’re a tad bit shallow/trashy, but they have been a great escape from the copious amounts of school reading have had to do lately. And I must admit that sometimes a cheesy novel that requires no brain power is just what the doctor ordered. :)

I’m hoping get to sleep early again tonight so I can kick this cold.

I went to sleep last night at 10:00PM last night. It was Saturday. Apparently I’m 80 years old.

My Recovery Must-Haves

Mizuno Wave Inspire 6

Note to self: do not order new running shoes when you are injured and cannot run unless you want them to sit in your room and torture you while you ice your leg and pout.

I ordered these babies online from Running Warehouse last Sunday because Mizuno has discontinued this model and I am absolutely IN LOVE with them. I’ve gone through two pairs of the pink ones but they didn’t have them in my size so I switched it up by getting the lime green ones. I love them! And also…they were insanely cheap!! I bought my first pair for like $100 and these bad boys were on sale for $47! Running Warehouse also doesn’t charge taxes or shipping, so I highly recommend it to any runner. Ryan ordered a new pair of Nike Frees at the same time and rubbed it in my face by running in them this morning while I was on the eliptical. Thanks, babe. ;)

Luckily, I also ordered a couple things off of the website that I could use immediately.

My very own foam roller!! I have been wanting one of these for a really long time. I use one occasionally at our gym here on campus but it’s really warn down and it’s a pain to have to get it out of the training room every time I want it. This guy was only like $18 and I love him already. Ryan and I had some fun trying him out last night.

I also got a calf compression sleeve, which contributes quite nicely to my little collection of recovery remedies.

Here, my friends, is what I’ve been doing lately in hopes of fixing my little injured leg. We have the aforementioned foam roller and calf compression sleeve, which I wore this morning while I did some weights and a little elipticalling and it felt great! A trip to Target also supplied me with some Aleve liquigels and a reusable ice pack. Before now, I had been using ice cubes in plastic sandwich bags to ice my leg. I decided to stop being a cheap college student and get something a little more legit.

I also got some Mucinex, because I woke up the other day with a bit of the cold, which I am blaming on my boyfriend who is also sick. It’s supposed to be spring yet it is snowing in Chicago and I have a cold. Yeah. I don’t want to talk about it.

As far as working out goes, I’ve been doing lots of weights and yoga, hoping to stretch and strengthen my muscles as much as possible to aid my recovery.

My yoga mat and dumbells have been very appreciative of my retrieving them from their home underneath my bed for a little lovin’. I think they get a little jealous of my running shoes sometimes.

Last but certainly not least….

Lots of water and lots of blog stalking have been getting me through the past 9 long days without running. Seriously, creeping on your guys’ blogs makes my day. I love hearing about everyone’s days and seeing the pictures of the delicious foods that you are eating!

Confession: I have taken NO pictures of food lately because I am legitimately living off of packets of instant oats and canned healthy choice soup. We have not had time to grocery shop since spring break so seriously…nothing I have been eating has been particularly appealing. Hopefully that will change soon :)

A Common Theme

Well…it’s official: Spring break is over. I am back to the dreary, rainy, windy city of Chicago and missing the beautiful sunny Florida and my wonderful sister already! It was such a great break. We had so much fun lying on the beach soaking up some sun, eating amazing food and way too much ice cream, and catching up on much needed sister time. I don’t think Bailey and I have gotten much one-on-one sister time since she got married almost two years ago. It was great to hang out with her!

Before I get to the main point of this post, I wanted to fill you guys in on an awesome recipe that Bailey and I tried out one night. She had tried coconut  shrimp at her friend Nicole’s house and loved it so we decided to recreate the recipe. After a quick google search, we found a recipe and quickly set out to put together the delicious meal.

Ingredients included egg whites, corn starch + salt + cayenne pepper, and sweetened coconut.

We followed the instructions and dipped each shrimp in the cornstarch mixture first, followed by the egg whites, and finally the coconut.

We baked them at 350 degrees for about 15 minutes and paired them with some green beans sauteed with garlic, salt and pepper.

We alternated dipping the shrimpies in a sweet and sour sauce and our own spicy creation of dijon + soy sauce. It was a great contrast of flavors.

I wanna make this again asap! I’m wondering how coconut crusted tilapia would be…? I’ll let you know if I try it!!

Alright, now onto a more serious subject. As you guys know, I have been having some leg issues lately and took the whole week prior to my half marathon completely off of running. During the race, I experienced a bit of pain but was able to finish in the time I had hoped. However, since then, the pain in my leg has only gotten worse. I think that running on the hard concrete route of the race really took a toll and only made my injury worse.

I had a few major break downs last week when I realized that it would be a long time before I could run again. I’m not exactly sure what my injury is and I plan on going to a doctor this week, but I’m pretty sure that I will be taking a long break.

Lately I’ve noticed a common theme that has appeared on several of my favorite blogs. Janae’s post on Self Worth, Julie’s post on The Comparison Trap, and Courtney’s post on what to do When Life Hands you Lemons have all covered the same general topic that all girls struggle with: self-esteem. In a world filled with unbelievably high expectations for women these days, it is hard to be happy and content with exactly who we are.

I am constantly comparing myself to other girls…whether in my classes or on the cover of a magazine, I struggle so much with coveting things that other girls have. Why do I do this?? Why do women in general do this? Why can’t we see that we are fearfully and wonderfully made in God’s image and simply be happy with ourselves?

This struggle intensifies for me when I am injured and unable to run. My passion for running has given me an escape from stress or homesickness or whatever problems I am dealing with on a daily basis. It makes me feel strong and confident and secure. So when I can’t run…I feel week and insecure and unsure of myself.

Janae is currently injured as well and reading her blog lately has really helped me to keep an optimistic attitude about not being able to run. But it still remains a constant challenge. I just wanted to  let you guys know how much all of you have helped me with this struggle. Reading your blogs and receiving your comments on my blog, your encouragement for my training or your sweet comments on my race have given me a great deal of joy.

The healthy lifestyle blog world is such an awesome community of women who are strong and confident and happy with who they are and it has been such an inspiration for me. I am so glad that I have found this outlet and that I have found all of you who share this passion with me.

A Quick Recap

Hi guys!!

How has your week been going?! I’m so sorry that I haven’t posted since the race…I’ve been doing lots of relaxing and enjoying spring break with my fam.

Remember how I was thinking of camping out in the airport last Friday night? Yeah…I chickened out. Haha. I ended up just paying a cab driver $50 to take me to the airport at 4:00AM. I was exhausted, but I think it was worth it. I arrived in Florida on Saturday morning and have been enjoying some awesome time with my mom, dad, sister, and brother-in-law.

And guess what! My mom and I completed our first half marathon on Sunday! :)

Here’s a quick recap…

We were SO tired! Not only did I lose 1 hour because of the time change, we also had to spring our clocks forward on Saturday night! So getting up at 5:00AM was pretty killer. But we were both really excited. We got to stay in a really nice condo right in Sarasota so the drive to the race site was only about 10 minutes. It would have been over an hour had we stayed at my sister’s house in St. Pete, so I was glad for the extra sleep.

We got dressed, stretched, and ate some PB toast with bananas for pre-race fuel. Before long, we hit the road!

It was still dark while we were waiting for the race to start (it began at 7:00AM) but my mom had to wear her sunglasses because she knew she’d need them once it got light, haha!

I wore my dad's HUGE jacket while we waited. it was cold!

We planned to have my family meet us at around mile 5 so that they could grab our jackets.

We ran at about a 10 minute mile pace for the first 5 miles, and it was really nice. We came up over the bridge right next to the ocean right as the sun was coming up; it was so beautiful! At about mile 6, my mom encouraged me to run up ahead so that I could see how fast I could finish it. She promised me that she’d be fine running it alone, so I took her up on her offer :)

I quickened my pace to about an 8 minute mile and maintained that speed for the rest of the race. I felt so good! My leg hurt a little bit toward the end, but I didn’t let it slow me down. The weather was PERFECT and the race environment was really fun.

When I finally saw the finish line, all I could think about was the coffee and pancakes that awaited me after the race :)

And I finished in 1:51, which I was totally happy with since my goal was just to finish under 2 hours!

She finished in about 2:06, which was 4 minutes under her goal of 2:10! She did such an amazing job.

After the race, we went out to breakfast where I dominated much more than my half of the omelet and pancakes that my sister shared. The last two days have been filled with WAY too much food and lots of relaxing :) I will try to get back on and post more pictures of the week in the next couple of days.

My Airport Conundrum

Alright, so I have some good news…and I have some bad news.

Good news first!

I am officially DONE with all midterms/finals for this quad! Ryan and I took our Business Final test last night and promptly went to Chipotle to celebrate, where I dominated a HUGE chicken salad. Unfortunately I don’t have a picture of this masterpiece because it was sort of a spur of the moment trip, so I didn’t have my camera. But take my word for it: it was huge and delicious and I ate every.last.bite.

On to the bad news…

I am faced with a bit of an airport conundrum.

My flight to go to Florida to see my sister and run my first half marathon (!!!) leaves tomorrow morning at 6:00AM. Why is this a problem, you ask?

I have no method of getting to the airport. My original plan was to have Ryan take me, but he left for his spring baseball trip this morning at the crack of dawn. Apparently I didn’t think about that when I booked such an obscenely early ticket.

The train doesn’t run that early (since I have to be there by 5 at the latest) and I don’t really want to take a cab, because it’s close to $50 to take a cab to the airport! No thank you.

Sooooo…..I have decided that I am going to camp out in the airport tonight.

Aggressive, I know.

But I figure that if I take the train there tonight, I can just find a chair, throw a movie into my computer, eat some snacks, and hunker down until my flight leaves. Hopefully I’ll be able to get some sleep!

In preparation for such an event, I made a trip to Target yesterday for snackage/entertainment. I plan on getting dinner before I get on the train, but I know that I will be wanting snacks while I’m chillin in the airport, and I don’t wanna spend a million dollars while I’m there.

Snacks will include Chobani, bananas, a granny smith apple, a Luna bar, and some unpictured strawberries that were on sale and screaming my name. Literally. I couldn’t leave without them. I also loaded up on my favorite Extra gum because I’m a gum freak and literally spit out a piece and put in new one approximately every 5 minutes. It’s an expensive habit.

I’m also aware that there is a Red Mango in the airport, so I’m thinking some froyo will be a must….

YUM.

Entertainment shall include…

Beth Moore bible study and new "Something Borrowed" novel

I am bringing along my Breaking Free bible study by Beth Moore and the book Something Borrowed by Emily Giffin. I saw that they are making this book into a movie, and always like to read the book before seeing the film. I’ll let ya know how it is!

Speaking of this bible study, I’ve decided that instead of giving something up for lent, I would add something into my life that would strengthen my relationship with God. I know I mentioned the possibility of giving up coffee for lent, but honestly I have a feeling that all I would be doing is thinking of coffee during that time; not of the sacrifice that Jesus made for me. I am only 2 days into this study, but it’s great so far!

iPod and new movie

I am also bringing my iPod of course and this movie that I bought yesterday at Target. My mom and I saw it in theatres and I have been chomping at the bit for it to be released to DVD. It is SO cute. Please go rent/buy it right now. Or come to Midway airport tonight and watch it with me. :)

I’m debating whether or not to bring my Spanish homework to work on the insane load of homework that my professor assigned for over break. No me gusta.

Hopefully all of this will succeed in keeping me somewhat occupied for 10+ hours in the airport. Lord help me…

Anyways! This morning I woke up, headed to the gym and did Courtney’s 45 minute treadmill walk. Technically, today and tomorrow are supposed to be rest days since Sunday is race day, but my leg always feels better after I stretch it out, so this workout was perfect. I headed back to my apartment and made myself a BOMB breakfast.

Um…how frickin adorable is that?! I want one right NOW! I went to the website that she said she ordered them from and guess what I found!!

YES that spoon says JORDAN! It’s a sign. I need one. There are also lots of mother’s day spoons, so I might mail one to my cute mother once May rolls around.

Currently I am finishing up my coffee and finishing up my packing until 10:30 when I’m going to yoga. I wanna get all stretched out and relaxed before race day!

I don’t know if I’m going to be able to post before then, but I will definitely let you guys know how it goes! And I’ll fill ya in on my epic airport adventure, as well. :)

Meatless Monday Fail and a Week Without Running

Hi guys! I hope your week is off to a good start. Mine is crazy busy already and I am sooo antsy for spring break to start! I fly off to Florida on Saturday morning to visit my sister and run my first half-marathon (!!!) and I’m chomping at the bit to get going! Before then, I have to get through a presentation in Spanish, an International Accounting final, and a Business Law final. Say a little prayer for my sanity if you get a chance. :)

Alright so I must warn you that the food photos in this post are far from artistic or appealing…but my meals yesterday (although not very photogenic) were quite delicious. I woke up and did a quick weight routine and then promptly started on breakfast. I made a fried egg and ate it alongside a bagel thin. I ate one half with my egg smothered in green tobasco and topped the other with a little pumpkin, PB and banana slices. Weird yet delicious combo.

After scarfing the above feast and doing some last minute homework, I hopped in the shower and got ready to start my day. While I was packing my lunch to take to work, I decided to try to go meatless for a day. I’ve been wanting to institute “Meatless Mondays” for some time now, so I figured why not today? I packed a big tupperware of bean salad (chickpeas, black beans, red onion, lemon juice, salt, pepper, red wine vinegar, and EVOO) with fat free feta, some carrots, a strawberry Chobani and half of a grapefruit. I also brought a Luna bar in case I was feeling snacky later.

Um…HOLY HUGE LUNCH! I always bring way too much food (hey, better than not enough!) And that bean salad totally filled me up! I ended up not eating the Luna bar and saving the carrots for a post work snack.

For dinner, I planned on making roasted green beans, as inspiration from Julie and Jess, so I preheated the oven, sprinkled my beans with salt and pepper and popped them in the oven for about 15 minutes.

And this is where meatless Monday failed. Or rather I failed.

I mindlessly made a turkey sandwich to eat alongside my green bean “fries.”

Halfway through eating it, I literally said “CRAP!” out loud. Haha. Oh well. I shall try again soon! (Probably not next Monday, because I will be at my sister’s house and I will eat whatever she feeds me! :) )

Seriously though, these green bean fries were the BEST! I might have to try them again tonight. I dipped them in a big gob of dijon and inhaled them.

So other than eating, guess what else I’ve been doing?

A whole lot of running cross training.

I mentioned this weekend that I’ve been icing my left leg because I’ve been experiencing a bit of pain…guys, I’ve been experiencing A LOT of pain. And it’s starting to worry me a little bit. I really need to get to the doctor and get it checked out in case of the possibility of a stress fracture or another serious injury. But I’m honestly too stubborn to do so before the race this weekend. I’ve been looking forward to it FOREVER and I refuse to not run it!

So after a talk with my parents about what this week should look like, we decided that it is smartest for me to take the week off of running so that my leg can be fully rested for race day.

So instead of the 4 mile run that was on the agenda for my training, I woke up this morning and did 40 minutes on the eliptical followed by 30 minutes on a bike.

Seriously. It killed my soul.

I hate cross training!!! Luckily I brought along a Jodi Picoult book to make time pass quicker…

only 50 pages in, but i like it so far!

I know that I’ll be happy that I took the week off running when I run this weekend. Hopefully I will be full of energy and be able to rock my very first half marathon!! :)

How to Have an Awesome Sunday

1. Start out with a nonfat dirty chai from Starbucks, a peach Chobani, and some Jesus time.

This was the first time I had ever seen it. Clearly, I’m a little behind the times. Don’t judge me. It was great!

3. Spend some quality time with Bob.

4. Make a HUGE and fantastic late lunch and eat it in approximately 3 minutes.

5. Buy these to make for Ryan’s birthday on Tuesday…

And plan on keeping half for yourself. :)

7. Justify getting a snack every 15 minutes by doing lots of homework…

8. Skype your adorable parents.

9. Rely on your roommate’s wireless mouse all day because yours broke.

Oh wait…no. Don’t do that. It sucked.

10. Plan on getting into bed with a hot cup of tea and this movie…

Around 10:00 p.m. because you’re a 20 year old grandma.

All Things Orange.

Hey! I don’t know if anyone is actually reading/following my blog at all, but either way that’s alright. I love looking at other blogs, but mostly this blog is just for me. It’s a great way to stay on track with my goals for running and post pictures of my passion for food :)

Lately, I’ve been loving anything and everything that is orange! Generally, I’m not a huge fan of the color orange. However, pretty much every orange food there is, I am a fan. I was going back through some photos of this weeks meals and snacks to update the blog, and realized that my favorite meals have included some sort of orange food group.

Thanks to Ryan’s awesome mom, I was blessed with two lovely cans of pumpkin last week. What do you do when you have two cans of pumpkin?

Make a gigantic pumpkin pancake, of course! I know this pancake doesn’t look all that orange, but it was definitely bursting with pumpkin flavor. I combined:

  • 1/4 cup oats
  • 1/4 cup egg whites
  • 1/4 cup pumpkin puree
  • TONS of pumpkin pie spice

And cooked it in a skillet like a pancake! Within a few minutes it was ready to be devoured. I smothered it with a bit of peanut flour mixed with water, 1/2 a sliced banana and some frozen blueberries.

Pumpkin made another appearance in a breakfast this week. I made pumpkin oats with instant low sugar maple and brown sugar oatmeal and a few heaping spoonfuls of pumpkin, topped with a banana. I seriously don’t understand why pumpkin is only eaten around holidays. I could eat it EVERYDAY.

Okay, orange food #2. I have been eating my weight in carrots lately. They’re crunchy and delicious and easy to pack on the go. Most of my lunches this week have been totally boring since I have to pack them to take to lunch. They usually look like this…

So although today’s breakfast was lacking in orange-ness, it was still very good. My plan for today was to run 10 miles per my training schedule (the race is next week!!!!) so I fueled up pre-run with this…

While laying in bed finishing up My Big Fat Greek Wedding, I iced my leg (it’s been feeling kinda sore around the calf area), ate a sandwich thin with PB and banana, and took a few advil. At 9:00am, I was out the door and on my way to the gym!

Selena was on TBS, which made my 10 mile run FLY by! I love when there is a good movie on. Rachel Ray was cookin up somethin delicious on the TV to the right, so I enjoyed that as well :)

Post run lunch was a plethora of orange flavor/color.

YUMMY

I used some leftover shredded chicken to make an AMAZING open-faced sandwich that was inspired by the BBQ chicken pizza Ryan and I made a few weeks back.

This guy turned out sooo good. I toasted a sandwich thin, loaded it up with bbq sauce, piled on shredded chicken and topped it off with an awesome combo of parmesan, mozzarella, and cheddar cheese. Popped it in the microwave for 45 seconds and ta da! Who needs california pizza kitchen? :)

On the side I gobbled up some carrots with hummus, a big navel orange and some no sugar added cranberry juice. While I was making the above mentioned sandwich, I scarfed a few about a million pretzels with hummus. So good.

My afternoon snacks have been as follows:

11 days till my half-marathon in Sarasota!

Happy Wednesday! I don’t know about you, but I am SO happy that this week is nearly half way over. The past couple of days have absolutely dragged and I cannot WAIT for Spring Break!! I will be flying out to Florida to see my sister and her husband [my mom and dad are also flying out there] and to run my very first half-marathon! I ran 13.1 on the treadmill last weekend, but that doesn’t really count. :) This one’s for real! I am getting so excited!

Unfortunately I must confess that I haven’t been very good at photographing my food lately. This week has been just as busy as last week and I’ve had to grab food on the go most of the time. Luckily, last weekend’s trip to Costco with my mom has helped keep the week snack filled! Lately, I’ve been munching on…

squeezable apple sauce!

Okay, seriously squeezable applesauce is a revelation. It’s changing my life.

These are DELICIOUS

Its barely been over a week since I got these oatmeal squares and I’m seriously nearly done with the entire first bag! Every time I walk by I grab a handful. It’s a problem.

Although I did see Bob Harper eating them this morning on an oatmeal commercial. I’m gonna justify my insane cereal eating with the fact that he eats it, too. :)

lots and lots of coffee!

I seriously thank God everyday for coffee. When my roommates were discussing what they would be giving up for lent this year, I briefly considered giving up coffee.

We then all agreed that 40 days of coffee-less Jordan would mean 40 days of a very, very bitchy Jordan.

I’ll keep you posted on the final decision. :)

I woke up bright and early for spin this morning, and it kicked by butt as always! But in a great way. I love the way I feel after that class. I downed  a big bowl of pumpkin oats and now have to get to class! I’m planning on stretching out my little legs at yoga tonight and then heading to the library with my cute boyfriend for a study date.
